High Protein Potato Salad

I hate when recipes or products in stores advertise as high protein and it turns out they only have 7 grams of protein per serving. I am a firm believer in high protein diets and its not easy to get 100 or 150 + grams of protein eating 7g at a time. This potato salad recipe has a whopping 37 grams. For comparison, an average potato salad recipe has only 4 grams of protein per serving and nearly double the calories.
To make this recipe, you will need 1 packet of my Diesel's Kitchen dill pickle dressing mix. It can be purchased here.
If you want to make the recipe without the Diesel's Kitchen Dill Pickle mix then you will have to add seasoning to the Greek yogurt and the recipe will not have the extra 24 grams of protein you will get from the mix.
High Protein Potato Salad
Servings: 1
Ingredients
5 ounces of Russet potato, peeled
1/3 cup nonfat plain Greek yogurt
1 packet Diesel's Kitchen Dill Pickle mix
1 tbsp pickle relish (optional)
Instructions
- Weigh out potato on food scale
- Cut potato into fourths
- Place potato in a pot of cold water, make sure water is approximately 1 inch higher than potato
- Bring to a boil and then set timer for 12-15 minutes
- Drain potato and allow to cool slightly
- Cut potato into 1 inch squares
- In a separate bowl, mix Greek yogurt, relish, and Diesel's Kitchen Dill Pickle mix together until well blended.
- Gently mix yogurt mixture into potatoes
- Place in fridge to cool down and allow flavors to meld. The longer it stays in the fridge ( up to 24 hours) the better it will taste
